Ingredients
  • 2 cup white beans (soaked overnight)
  • 500 gram beef (cut into small cubes)
  • 2 tablespoon vegetable oil
  • 1 medium onion (chopped)
  • 1 cup tomato puree (or 1 can of tomato sauce)
  • 1 tablespoon tomato paste
  • salt to taste
  • 1 teaspoon black pepper
  • 1 tablespoon paprika
  • 1/2 teaspoon cumin (optional)
  • water as needed

Instructions

  1. 1

Drain the soaked beans and rinse them well.

  2. 2

In a pot, heat the oil and cook the beef until browned. Add the onions and cook until soft.

  3. 3

Add the garlic and stir for 1 minute. Add the tomatoes, tomato paste, salt, black pepper, paprika, and cumin. Add the white beans and enough water to cover everything well.

  4. 4

Bring to a boil, then lower the heat and simmer for about 1 hour to 1.5 until the beans and beef are tender. Add water if needed during cooking. Taste and adjust the seasoning. (if you are using canned beans you do not need this much time and you can add the beans at the end after the meat is fully done and leave it for about 10 minutes only.)

  5. 5

Serve hot with bread or rice. Enjoy!

Chef's Notes

A nutritious fact about White bean stew is that white beans are rich in plant protein, fiber, iron, and potassium. The high fiber content helps support digestion and can help keep you feeling full longer, while the combination of beans and beef provides both plant-based and animal protein in one meal.
