White Bean Shakshouka

Ingredients
  • 1 can marinara sauce (or plain tomato sauce)
  • 3 eggs
  • 1 tablespoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • a pinch of chopped parsley
  • a sprinkle of shredded mozarella cheese
  • 1 cup white kidney beans (or canned ones if it is available)

Instructions

    Add the marinara sauce and spices to a pan and stir well over medium heat until it begins to gently boil. Reduce the heat to low add the white kidney beans give it a stir, then carefully crack the eggs directly into the sauce, keeping the yolks intact. Let it cook on low heat for about 5 minutes, or until the eggs are set to your liking. Turn off the heat, then sprinkle with fresh parsley and a light layer of cheese before serving.

Chef's Notes

Shakshouka was never originally made with beans. It started as a simple North African dish of eggs poached in tomato and pepper sauce. Adding white kidney beans is a modern twist that makes it more filling and protein-rich without losing its traditional soul.
