The Golden Lentil Soup

Ingredients
  • 1 1/4 cup lentil soup (the red lentil)
  • 4 cup chicken broth (or 4 cups of water and add 2 cubes of concentrated chicken flavour(knor or maggie))
  • 1 medium potato (cut into four 4 pieces)
  • 1 medium carrot (cut into big pieces)
  • 1 medium onion (cut into 4 pieces)
  • 15 gram butter
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon Black pepper

Instructions

    Start by rinsing the lentils thoroughly until the water runs clear. Add them to a pot along with the peeled and chopped potatoes, carrots, and onion. Pour in the broth and bring everything to a boil.

    Once it starts boiling, reduce the heat and let it simmer until all the ingredients are fully cooked and tender. Remove from heat and let it rest for about 5 minutes.

    Transfer the lentils and vegetables to a blender. Add salt to taste, black pepper, cumin, turmeric for that rich golden colour, and butter for a smooth, velvety texture. Blend until completely smooth.

    Serve hot, finished with a light sprinkle of fresh parsley and a dash of paprika.
