sambousek (also known as sambousa or sambusa).

Ingredients
  • 1 packet Fillo (phyllo) dough thick (454 grams)
  • 500 grams minced meat beef or lamp
  • 1 large onion (chopped finely)
  • 1 cup parsley (chopped)
  • 1 tablespoons 7 spices
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 tablespoon vegetable oil

Instructions

    Heat vegetable oil in a pan, add the minced meat, and cook while stirring until browned.

    Add chopped onions and continue stirring until soft and translucent.

    Add salt, pepper, and spices. Mix well and cook until everything is fully done.

    Open the fillo sheets and cut them into strips about 3 inches wide. Add a spoon of filling and fold into: triangles (classic), or rolls (like spring rolls)

    Place on a baking tray, brush lightly with olive oil, and bake at 425°F (220°C) for about 20 minutes, or until golden and crispy.

    Serve hot with yogurt on the side plain or with garlic and mint if you want to elevate it.

Chef's Notes

Sambousek is over 1,000 years old and it didn’t even start in the Arab world. The original version was called “sambusak” in ancient Persia (modern-day Iran). Traders and travellers carried it across regions, and it spread along major trade routes into the Arab world, South Asia, and even parts of Africa.
