Rustic Braised Beef & Garden Vegetables

Ingredients
  • 2 lbs beef (cut into small chunks)
  • 1 large onion (dices into small pieces)
  • 1/2 cup peas
  • 1/2 cup carrots (cut into small pieces)
  • 1/2 cup green beans (cut into small pieces)
  • 1/2 cup corn
  • 2 medium potatoes (cut into small pieces)
  • 4 gloves garlic (minced)
  • 4 medium tomatoes (without skin you can use canned ones too)
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • 1 tablespoon paprika
  • 1 teaspoon black pepper
  • 2 tablespoon vegetable oil (or any kind available)

Instructions

    Heat a small amount of vegetable oil in a pot over medium heat. Add the beef pieces and sear them until browned on all sides.

    Add the diced tomatoes and stir for a few minutes until they soften. Stir in the tomato paste and spices, mixing well to coat the meat. Once the mixture begins to boil, reduce the heat to low. Cover and let it simmer gently until the beef becomes tender.

    When the meat is nearly cooked, add the vegetables. Stir well so the vegetables absorb the rich flavours. Cover again and continue cooking on low heat until everything is fully cooked.

    Adjust salt to taste, and add a little water if needed to reach the desired consistency.

    Serve hot with steamed rice or fresh bread to soak up the rich, flavourful sauce. This dish pairs especially well with warm flatbread or traditional Arabic bread for an authentic experience.
