Chef's Notes

A nutritious fact: olive oil helps your body absorb the fat-soluble antioxidants in sun-dried tomatoes, especially lycopene, which is linked to heart and skin health. Sun-dried tomatoes are rich in lycopene, potassium, fiber, and vitamin C, while olive oil adds healthy monounsaturated fats. The balsamic glaze gives sweetness and acidity, but because it can be concentrated and sugary, a small drizzle is enough. So the combination is not only tasty; it is a Mediterranean-style pairing that can support heart health and antioxidant absorption.
