Maqluba“Upside-Down” Rice Dish

Ingredients
  • 2 lbs lamb meat preferable (you can also use beef or chicken)
  • 4 large eggplants (you can also use cauliflower or potatoes )
  • 1 large onion
  • 4 gloves garlic
  • 2 leaves dried basil
  • 1 teaspoon ground cloves
  • 1 teaspoon black pepper
  • 1 teaspoon cardamon
  • salt to taste
  • 1 tablespoon all spices
  • 4 cups water
  • 2 cups basmati rice

Instructions

    Cook the meat with spices add the sliced onion and sliced garlic, then add water to make a flavourful broth.

    Fry or roast the eggplant after cutting it to long thin layers

    Layer the pot: Bottom: the meat Middle: the vegetables Top: rice

    Add broth and cook until rice is tender.

    Flip the pot upside down onto a large plate.

    You can served it with toasted nuts (almonds or pine nuts) on top as garnish Accompanied with yogurt cucumber sauce or fresh salad.

Chef's Notes

Maqluba is a traditional Middle Eastern dish (especially Palestinian, Jordanian, and Syrian). Its name literally means “upside down” because it’s cooked in a pot and then flipped onto a serving plate revealing beautiful layers of rice, vegetables, and meat.
