Lemon Cake

Ingredients
  • 1 large lemon
  • 3 large eggs
  • 1 cup sugar
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 1/2 cup sifted flour
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla
  • 1/4 cup cherries

    To make lemon cake, we add the whole lemon after cutting it into pieces with the rest of the ingredients except for the cherries into a blender and blend everything very well until fully mixed together. Then we pour the mixture into an oven pan after oiling it well so the cake will not stick.

    Lastly, we add the cherries after removing the pits. Then we place the cake in a preheated oven at 325°F (160°C) for about 45–50 minutes. Do not open the oven during the first 30 minutes. Enjoy!

Chef's Notes

One interesting thing about Lemon cake is that adding the whole lemon including parts of the peel gives the cake a much stronger natural citrus aroma and flavour because the lemon zest contains fragrant oils that are more powerful than the juice itself. That is why traditional homemade lemon cakes often smell amazing while baking.
