Lasagna Soup

Ingredients
  • 1 lbs Minced meat
  • 5 large tomatoes (or 1 can of tomato sauce)
  • 2 tablespoon tomato paste
  • 1/4 cup mozzarella cheese
  • 6 sheets lasagna oven ready (or any kind of pasta the important thing is the pieces to be small)
  • basil for garnish
  • 2 tablespoon vegetable oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon black pepper
  • salt to taste
  • 1 medium onion

Instructions

    Start by adding the minced meat to a pot with a little vegetable oil. Cook over medium heat, stirring until the meat is nicely browned.

    Add the minced onion and continue stirring until it softens and blends with the meat. Then add your spices, followed by the tomato sauce.

    If you are using fresh tomatoes, boil them first, peel off the skin, blend them, and then add them to the meat mixture.

    Stir everything well, then add the tomato paste. Cover the pot and let it cook on medium heat for about 15 minutes. If needed, add water depending on how thick or light you want the soup.

    Break the lasagna sheets into medium-sized pieces and add them to the pot. Stir gently to prevent sticking, then cover and cook on low heat for another 15 minutes. Stir occasionally.

    Once the lasagna is tender but not overcooked, remove the pot from the heat. Serve hot, topped with shredded mozzarella cheese and a sprinkle of basil.

Lasagna soup is a modern twist on a very old classic while traditional Lasagna dates back to ancient Rome, lasagna soup didn’t really appear until home cooks started simplifying recipes for busy kitchens. Fun fact: the idea of turning lasagna into soup became popular because it delivers all the same flavours—rich tomato sauce, pasta, meat, and cheese but in half the time and with one pot. It’s basically comfort food engineered for efficiency without sacrificing taste.
