Kale Salad With Shrimp And Feta

  • 4 cups kale (chopped)
  • 1/2 cup chickpeas
  • 3/4 cup shrimp (the small size (peeled))
  • 1/2 cup feta cheese
  • 1/2 cup cherry tomatoes (cut in half)

  • onion powder
  • garlic powder
  • olive oil
  • butter
  • 1 tablespoon red wine vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon dijon musturd
  • 1 medium lemon juice

Instructions

    Start by adding the cleaned, peeled shrimp to a pan with a bit of butter and cook until tender and lightly golden.

    In a bowl, add the kale and pour in the dressing made with olive oil, lemon juice, red wine vinegar, Dijon mustard, maple syrup, salt, and pepper. Massage the kale really well, this step is key. It softens the leaves, deepens the flavor, and makes it much easier to enjoy.

    Next, prepare the chickpeas. Add them to a pan with a drizzle of olive oil, then season with paprika, salt, and pepper. Cook until they’re golden and slightly crispy. You can also roast them in the oven if you prefer.

    Finally, bring everything together. Add the chickpeas, shrimp, and cherry tomatoes to the kale, then finish with crumbled feta cheese. Give it a good mix, and it’s ready to serve.
