
Garden rice with savoury minced meat

Cook the Rice, rinse the rice under cold water until the water runs clear. In a pot, bring the water or broth to a boil (for every 2 cups of rice 2 1/2 cups of water or broth) add the rice and a pinch of salt, then reduce the heat to low. Cover and cook for about 15–18 minutes, or until the rice is tender and fluffy.

In a large pan, heat the vegetable oil over medium heat. Add the diced onion and sauté until soft and lightly golden. Add the minced meat and cook while stirring until it is fully browned.

Stir in the diced carrots and peas. Season with the spices. Continue cooking for several minutes until the vegetables are tender and well combined with the meat. Meanwhile fry the pealed almonds with a bit of vegetable oil till golden.

Transfer the cooked rice to a serving plate or bowl. Spoon the minced meat, peas, and carrot mixture evenly over the rice garnish the dish with the fried almonds. Serve warm as a comforting and hearty dish. This meal pairs well with yogurt or a fresh salad.
