Fattoush Salad

Ingredients
  • 2 romaine lettuce (or any kind of mixed greens)
  • 2 medium tomatoes
  • 3 small cucumber
  • 1 medium onion (or green onions)
  • 1 cup fresh parsley (chopped)
  • 1 medium lemon juice
  • fresh mint (gives it that signature freshness)
  • pomegranate seeds (for garnish)
  • 1 tablespoon sumac
  • radishes
  • Toasted or fried pita bread broken into pieces
  • olive oil
  • 2 glove garlic (crushed)
  • salt

Instructions

    Cut pita into pieces and toast or fry until golden and crispy. Set aside.

    Chop everything fresh Keep pieces medium-sized not too fine, not too big.

    Make the dressing. Mix olive oil, lemon juice, garlic, salt, sumac, and pomegranate molasses (if using).

    In a large bowl, mix all vegetables and herbs.

    Add dressing. Toss well so everything is coated then add the pomegranate seeds

    Add pita last. Just before serving, add the crispy pita and mix lightly.
