
Creamy Spiced Tomato & Mozzarella Pasta

Start by blanching the tomatoes in boiling water, then peel and roughly chop them.

In a pan, heat a small amount of olive oil and sauté the garlic until fragrant. Add the tomatoes and gently mash them to release their juices. Stir in the tomato sauce and mix well.

Season with paprika, oregano, curry, and any desired spices. Bring the mixture to a boil, then reduce the heat.

Add the sour cream and stir until fully incorporated. Let the sauce simmer on low heat for about 20 minutes, allowing the flavours to develop and the sauce to thicken.

Mean while cook the pasta as you always do

Finally, add the mozzarella cheese and stir until it melts into the sauce. Cover the pan, turn off the heat, and let it rest briefly before serving over pasta.

Served with optional meatballs for added protein and flavour, or enjoyed as a rich vegetarian dish.
