Classic Sahlab (Middle Eastern Style)

Ingredients
  • 4 cups cold milk
  • 4 tablespoon sahlab powder (or substitute below)
  • 4 tablespoon sugar (adjust to taste)
  • 1 teaspoon rose water or orange blossom water
  • crushed pistachios
  • crushed walnut
  • Shredded coconut

Instructions

    Cold start is key, in a pot, add milk + sahlab powder (or cornstarch mix) + sugar Mix well while cold so there are no lumps

    Put on medium-low heat and keep stirring constantly do NOT stop stirring or it will clump

    After 5–10 minutes, it will thicken into a creamy consistency you want it like a light pudding, not too thick

    Stir in rose water or orange blossom water at the end

    Serve immediately pour into cups while hot Generously add: coconut pistachios walnuts

Chef's Notes

If you do not have Sahlab powder here it is a good substitute: 2 tablespoon cornstarch 2 tablespoon milk powder (optional but recommended) This gives you that same thick, creamy texture. Pro tip (this makes a big difference) toast your nuts lightly before adding them on top. It brings out the oils and makes the flavour 2x better.
