Ingredients
  • 6 big potatoes (cut into cubes)
  • 1 lbs minced meat
  • 1 medium onion (chopped finely)
  • 2 cups shredded mozzarella
  • salt and pepper
  • olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 2 tablespoon vegetable oil

Instructions

  1. 1

    Preheat the oven to 200°C / 400°F.

  2. 2

Peel the potatoes and cut them into evenly sized cubes. Place them in a baking dish or on a lined baking tray.

  3. 3

Drizzle the potatoes with olive oil, then season with salt, black pepper, smoked paprika, garlic powder and onion powder. Toss well until all the potatoes are evenly coated.

  4. 4

Bake for 30–45 minutes, turning once halfway through, until the potatoes are tender and fully cooked.

  5. 5

Place the potatoes under the grill or broiler for about 5 minutes, until they become golden and crispy.

  6. 6

While the potatoes are cooking, heat a little vegetable oil in a pan. Add the minced beef and cook, stirring regularly, until browned.

  7. 7

Add the diced onion to the meat and continue cooking until softened. Season with salt and black pepper to taste.

  8. 8

Once the potatoes are ready, remove them from the oven and spread the cooked minced beef evenly over the top.

  9. 9

Sprinkle generously with mozzarella cheese, then return the dish to the oven for about 5 minutes, or until the cheese has melted and turned lightly golden.

  10. 10

Serve hot and enjoy the crispy potatoes, savoury beef and melted mozzarella together.

  11. 11

For a fresh and creamy finish, top the hot cheesy beef potato bake with diced avocado, finely sliced red onion, chopped fresh tomatoes and a spoonful of sour cream.

Chef's Notes

This Cheesy Beef-Stuffed Baked Potato is a hearty, protein-rich meal. The baked potato provides energizing carbohydrates, potassium, vitamin C and fibre, especially when served with the skin on. Minced beef adds protein, iron, zinc and vitamin B12, while mozzarella cheese contributes calcium and additional protein.
