Ingredients
  • 8 pieces wild salmon
  • 1 large red onion (diced small pieces)
  • 1 cup cherry tomato
  • 1/2 cup parsley (chopped)
  • 1/4 cup olive oil
  • 1/3 cup soya sauce
  • 2 tablespoon honey
  • 1 tablespoon salt
  • 1 tablespoon smoked paprika
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1/2 lemon juice

    We start by combining the spices with the chopped onions, cherry tomatoes, olive oil, and fresh parsley. Mix everything well so the flavours come together.

    Then we take the salmon pieces and rub them thoroughly with this mixture, making sure every piece is well coated so the fish absorbs all the flavours.

    Cover the dish and place it in the oven. Let it bake for about 45 minutes, or until the salmon is fully cooked and tender.

    Once it’s done, uncover it and place it under the grill for about 5 minutes to give it a beautiful golden finish.

    Serve it with rice, a fresh salad, or both, and enjoy a simple, rich, and satisfying meal.

Chef's Notes

Along the eastern Mediterranean coast, fish was never meant to be complicated. When a fresh catch came in, the rule was simple: cook it the same day, and don’t interfere with its nature. Olive oil, a bit of salt, maybe garlic, and something from the land to accompany it. That “something” was often tomatoes once they became part of the regional kitchen generations ago.
