What it means
Instead of throwing spices into water or at the end…
you cook them briefly in hot oil or fat first.
How to do it properly
Heat oil (olive oil or ghee) on medium heat
Add onions or garlic first (optional but ideal)
Add your spices (cumin, coriander, paprika, turmeric, etc.)
Stir for 30–60 seconds only
Then add your main ingredients (meat, rice, broth)
